Regular and whole wheat bread may be useful or harmful equally

The journal Cell Metabolism published the results of a study by the Weizmann Institute scientists aimed at determining the utility of whole grain bread and ordinary bread from processed wheat.

The scientists found that the bread did not have a significant effect on the health of the participants in the experiment. However, the reaction of the human body was so different that the researchers managed to develop an algorithm that determines the response to different types of product. About 10% of the calorie content of the diet was obtained from bread. One group consumed white bread, and the other - bread from whole grains.



There were no fundamental differences between the effect of different types of product on the body, but different people had different glycemic responses to the same type of bread, regardless of its generally accepted utility or harm. More than half of the subjects are better able to respond to bread from ordinary flour, the rest - to whole grains. Scientists are convinced that the difference in reactions is due to the different composition of the microbiome.
