The authors of a new study conducted at the Weil Cornell College of Medicine in New York found that the order of consumption of protein and carbohydrate foods had a significant effect on glucose and insulin levels after eating.

In their publication on the pages of Diabetes Care, scientists report that protein products are preferably consumed in front of carbohydrate.

For people with type 2 diabetes it is extremely important to maintain a normal level of glucose after meals, because too high sugar concentrations can lead to serious complications in time, including increased arterial stiffness, coronary heart disease, etc..

Past studies have confirmed that eating vegetables or protein foods in front of carbohydrates is an effective way of smoothing glucose peaks after eating. The authors of the latter work wanted to test how this discovery can be applied to a typical Western diet consisting of a mixture of vegetables, protein foods and animal fats.

Scientists scored 11 patients with obesity and type 2 diabetes mellitus who took metformin. At intervals of a week they were forced to eat the same set of dishes (ciabatta bread, orange juice, chicken breast, tomato salad, broccoli steamed, butter), but in different order, after which the researchers measured the glucose and insulin content of participants.

It is best to eat carbohydrates last.

Scientists found that when eating vegetables and protein foods before carbohydrates, blood glucose was 29%, 37% and 17% lower at 30, 60 and 120 minutes after eating, respectively. With this order of food intake, the level of insulin in the participants' blood was significantly lower, that is, the load on the pancreas was reduced.
