Zucchini is one of the most universal vegetables, which, due to its useful properties, occupies an important place in the diet of people suffering from diseases of the gastrointestinal tract and the elderly. This vegetable, which is a close relative of pumpkin, is rich in proteins, fats, organic acids, as well as potassium, calcium and phosphorus. The zucchini is easily absorbed by the body, remove toxins and excess cholesterol, which makes them useful for everyone who monitors their health.

For the preparation of zucchini, you can use various methods: cook, fry, bake, or grill. Zucchini are great to make pancakes, cutlets or caviar out of them. It is not only tasty, but also useful, as they contain many vitamins and minerals.

One of the simplest and most delicious ways to make zucchini is frying. To do this, cut the zucchini with circles, roll them in flour, salt and sprinkle with spices, and then fry in lean oil. Ready -made fried zucchini can be sprinkled with herbs, grated with garlic or poured with sour cream or mayonnaise. This dish can be served as an independent or as a side dish for meat or fish.

Another interesting and hearty dish is stuffed zucchini. To do this, it is better to choose a mature and large zucchini, which must be cut into pieces and cut the middle. The filling can be prepared from meat (lamb, beef, pork), fish, cereals (buckwheat, rice), vegetables, herbs, mushrooms or even fruits. After the minced meat filled the zucchini, they need to be baked in the oven or put out in a pan. The resulting dish can be served with sauce or sprinkled with fresh herbs.

Kabachkaya caviar is another popular dish that was especially loved in Soviet times. For its preparation, you can fry finely chopped onions and carrots, then add chopped zucchinas, salt, spices, sugar and tomato paste.

All ingredients are mixed and stewed until cooked. This recipe allows you to get aromatic caviar, which can be served as an independent dish or as a snack.
