Australian researchers from the Laboratory of Nutrition and Human Metabolism at Skidmore College found that products that contain resistant (resistant), or indigestible starch, trigger physiological processes in the body, which activate digestion and increase energy exchange. All this contributes to a more intensive consumption of body fat reserves.

"Stable starch passes through the small intestine, where it turns into short-chain fatty acids, used by the body as energy. Such starches are powerful prebiotics, food for bacteria in the large intestine, "said Australian experts.

In their opinion, resistant starch, which is a part of potatoes, legumes and whole grains, can become one of the healthiest components of the diet for people with type 2 diabetes. Also, its use can compensate for the effect of frequent consumption of red meat and reduce the risk of developing bowel cancer, doctors said.

Experts noted that the thermal treatment of products affects the content of stable starch in them. For this reason, pasta, cereals, and legumes should not be used in a soft and fully prepared form, but in the form of "al dente", slightly firm.

A group of doctors led by Professor Paul Ariero conducted an experiment that showed that consumption of stable starch helps to control weight. A group of subjects from 70 women ate breakfast for pancakes. The dish was prepared with the addition of both conventional and stable starch, as well as the addition of a combination of starch and whey protein.

As a result, it was found that the combination of stable starch and protein led to an accelerated burning of calories by the body.

"As far as the potential for stable starch in the fight against obesity due to high-carbohydrate food is great, we do not know yet, but the data on its benefits are impressive. If you combine stable starch with fried eggs, hard cheese, whey protein, pea, chicken protein or Greek yogurt - this will be a powerful combination for burning fat for energy production, "said Professor Paul Ariero.
