Summer is an ideal time for light and delicious soups that saturate, but do not overload the body. Zucchini, as one of the main ingredients of this dish, add tenderness and freshness soup. With this recipe you can cook not only a healthy, but also a delicious dish that is perfect for hot days.
For this summer soup, we will need ingredients such as two zucchini, two potatoes, onions, fresh mint, as well as vegetable broth and a little cream for adding cream texture. Oils - olive and creamy - will give the dish a special aroma.
To begin with, we clean and cut zucchini, potatoes and onions in small cubes. In the stewpan, heat the butter and olive oil and, adding chopped vegetables to it, languish them for 5-7 minutes. The onion should become transparent, and the vegetables will give in a little heat, revealing their taste.
As soon as the vegetables are fried, add the vegetable broth to them and leave to stew over low heat for another 5 minutes. This time is needed so that all the ingredients are well soaked in aromas and acquire a rich taste.
With the next step, chop fresh mint and add it to the soup along with the cream. Mint will give the soup a unique aroma and a refreshing taste that is especially pleasant in the summer. After that, remove the soup from the fire.
To achieve an ideal consistency, knock down the soup with a blender to a creamy mass. Do not forget to add salt and pepper to taste.
