Usually fresh is called tea, produced this year, but in China, consumers are accustomed to consider fresh spring tea, coming on sale in April-May.

This tea is much more expensive, and the first spring days in China are still cold and slushy - this is the time when peasants on tea earn the most money. Old tea is tea that has been stored for over a year, but its biochemical aging can occur earlier or much later, depending on the storage conditions. The proverb says: "The wine is getting older, the more fragrant it is; tea the older, the worse ". Fresh tea has a clear color, it is transparent and saturated, aromatic and pleasant to the taste, to drink it - a true pleasure.

It is understandable why the Chinese prefer to drink fresh tea. Fresh tea in large quantities can be "intoxicated", since in the newly collected and processed tea leaves, the content of active substances such as tannin, caffeine, alkaloids. Theine and aromatic compounds of freshly brewed tea easily lead the nervous system of a person into a state of excitement similar to intoxication - with rapid circulation of blood, rapid heart rate, rapid change of emotions. Excessive consumption of too strong tea leads to intoxication with symptoms such as fever, dizziness, impotence, copious cold sweat, insomnia and even a shiver. In addition, in tea recently removed from the bush, the biologically active substances are quite aggressive and stimulate the stomach and intestinal mucosa too much, easily causing stomach pain and stomach whipping in people with weakened bowel function and with chronic gastric diseases. Such people should drink tea collected at least 15 days ago. During this time, the aggressiveness of biologically active substances in tea leaves is falling and it is this tea that has ideal properties. In practice, we in Russia never have to risk the excessive exposure to fresh tea, since to take it to the consumer (even with all the desire to do it as quickly as possible) takes at least a month - and this is the time for which tea has time to "mature".
