Scientist Eran Elinav from the Weizmann Institute in Rehovot (Israel) with a group of colleagues assembled a group of two dozen volunteers. Half of the volunteers agreed to eat almost one black bread for the sake of science for two weeks, and the other half with white bread. In both cases, about a quarter of the calories fell on bread, and the rest of the diet consisted of conventional foods.

A month later the groups changed places and started to eat another kind of bread, which was specially baked for them by the authors of the article. At that time, scientists monitored the health status of volunteers, observing how the concentration of glucose, trace elements and proteins in their blood changed when switching to a bread diet and completely abandoning bread, as well as changes in their weight, pressure and other physiological characteristics.

As Elinav said, these observations led to unexpected results - the first analysis of the collected data showed that both white and black bread had approximately the same effect on the work of the body and almost did not change how the metabolism in the body of volunteers worked.

Surprised by the results of the experiment, Israeli biologists compared how the body of different volunteers reacted to white and black bread. As it turned out, the spread in the reaction of the organism to wheat and rye flour was very large. Thanks to this, white bread was useful for some volunteers, while for others it was black.

Interestingly, the use of either one or the other bread did not change the microflora, which was previously associated with the positive effect of black bread on human health. Why this happens, the scientists do not know yet, but they assume that this is due to differences in the microbial microbial function, which is responsible for the processing of starch, glucose and other carbohydrates.

Disclosure of these differences, according to Elinav and his colleagues, will help us understand what bread is worth eating for different groups of people, and how the features in the work of their body can influence the success or failure of certain diets.
